Visiting Bicol province will be a worthwhile trip or a good addition to your bucket list this year. Aside from the rich culture and breathtaking landscapes that the region offers to tourists, Bicol is also known for its fiery local cuisine, as we all know the region's residents enjoy spicy foods. Coconut tree, and spices like the “siling labuyo” are abundant in this region so it is unsurprising that this two are some of the key ingredients in many Bicolano delicacies. The siling labuyo is a small chili pepper that is hotter than the Thai chili. Spices are used in every sort of cuisine in Bicol, especially desserts such as the famous Bicol Chili Ice cream. There is various local food that you can try in this region but here are the top 3 local dishes I have tried that I highly recommend you.

 1.      Bicol Express:

Bicol express is one of Bicol's most notable and delectable dishes. It's made with pork cubes, chili peppers, coconut milk, bagoong (shrimp paste), onions, tomato, and garlic. This regional dish has an excellent flavor balance of spice and sweetness. The spice in this dish adds some warmth to the dish, while the coconut milk enables to cool it down. The shrimp paste also adds to the saltiness and flavor depth of Bicol express that is why it is undeniable that every person would love this dish. Even though I am not a huge fan of spicy foods I find this dish to be delicious especially when my parents cook it in our home in Bicol.


2.      Pinangat (Laing):

Pinangat dish is consists of taro leaves (gabi leaves), chili, meat, and cooked in fresh coconut milk that makes the creamy taste it is also wrapped in gabi leaves and tightly tied with coconut leaf. The taro leaves, or gabi leaves in Tagalog, are also abundant in the region since this plant  sprouts everywhere. Pinangat is also known as "Laing" in Manila term and is prepared in a different way with the used of meat and spices. 

This can also be served with a variety of toppings and is typically served over rice. The flavors of pinangat in Bicol and Laing in Manila are quite different although they are both appetizing. The combination of this wonderful flavors of coconut milk, vegetables, and meat in every bite; isn't that mouthwatering? So never missed this cuisines when you go to Bicol because this will completely change your whole mood.

     Pancit Bato noodles is originated in the province of Camarines Sur, Bicol region a municipality known as "Bato" in which where its name derived from. The texture of Pancit Bato noodles is different from the normal Pancit canton noodles because its texture is harder than the normal noodles. This dish is prepared in a variety of ways, but the two most popular are guisado and sinabawan version. Furthermore, pancit bato can be prepared without any meat or vegetables and this dish is always present on any occasion in Bicol because the people always find the Pancit Bato dish in every event.
